When it comes to steak, those who prioritize taste often opt for rump steak. This cut comes from the hardworking backside of a cow, making it less tender than sirloin but with a rich and savory flavor. Additionally, rump steak is typically cheaper than other cuts of beef.

2. Tips for perfect rump steak

 

To prepare a delicious rump steak, select a well-aged piece of meat and cook it to medium or medium rare. A thick steak (at least 5cm) that can be shared is ideal. Start by searing the steak in a hot pan before finishing it in the oven.

To ensure great results, pay attention to seasoning, pan selection, and resting time. Salt the meat well before cooking and use a cast iron pan or griddle to cook it. A small amount of vegetable or groundnut oil is recommended, and it should be heated until almost smoking point to create a flavorful brown crust. Rest the meat before serving. Avoid using pepper during the cooking process, as it can burn in the pan.

To prepare rump steak, cook it on each side for three minutes, then transfer it to a baking tray and finish it in a hot oven for 10-15 minutes. While it is possible to finish cooking the steak in the pan, using the oven will result in a more even and tender steak.

Resting the steak is a crucial step for achieving perfection. Rest the steak for 10 minutes, during which time you can set the table, open a bottle, and make a quick pan sauce. Although some purists might prefer to simply enjoy the deliciousness of the rump on its own, it can be enjoyable to add a little extra flavor. To make a pan sauce, finely chop a shallot and a couple of cloves of garlic and cook them in the pan you used to sear the steak (discard any excess fat but don't wipe the pan). Deglaze the pan with a splash of wine, brandy, or stock, add herbs if desired, reduce the sauce until it's syrupy, and then add a knob of butter and/or a dash of cream.

After the steak has rested, slice it and serve with a drizzle of sauce.

To make a rump steak, you will need a 500g or larger steak that measures 5cm in thickness, as well as vegetable oil or groundnut oil, flaky sea salt, and black pepper.

To prepare the steak, remove it from the refrigerator and let it come to room temperature for at least an hour before you start cooking. Preheat your oven to 180°C/gas mark 4.

Heat a heavy-based frying pan or griddle pan over high heat and add a splash of vegetable or groundnut oil. Pat the steak dry with a paper towel and generously sprinkle both sides with flaky sea salt. Once the pan is very hot, with the oil almost at the smoking point, add the steak and cook for 3 minutes on each side. If there is a thick layer of fat on the outside, use tongs to hold the steak fat-side down in the pan so it can brown for a minute or so.

Transfer the steak to a roasting tin and put it in the preheated oven for 10-15 minutes. After removing the steak from the oven, season it with pepper and let it rest on a warm plate, covered loosely with foil, for an additional 10 minutes. Finally, slice the steak and serve it with your choice of accompaniments.
