Step 1: Wash tomatoes, smash garlic, cut cheese into thin slices.
Step 2: Put dry yeast, 1 tablespoon flour, ¼ cup warm water in a large bowl, let stand until the surface of the water appears bubbly. This proves that yeast is still working well. Add 160 grams of flour, remaining warm water, salt, and oil to a bowl, stirring until smooth. If the dough is a bit mushy, add more flour and the dough may be a little wet.

Step 3: Put the flour mixture on a flat surface sprinkled with flour to prevent sticking, knead the dough until smooth, soft and elastic, the process takes about 8-10 minutes. Roll into a ball, put in a large food container, sprinkle flour on top, cover the bowl tightly. Leave in a warm place for about 85 minutes for the dough to double in size.
Step 4: Tomatoes put in a blender, add a little water, and puree. Crush garlic into a large pan, heat to smell and start to yellow, about 2 minutes, add tomatoes, basil, sugar, salt. Cook over low heat, uncovered, stirring occasionally, wait until mixture thickens, then reduce heat, cook for another 40 minutes. Add salt to taste, let cool.
Step 5: Place the pizza stone in the oven, open at 250 degrees Celsius for 45 minutes.
