2. Origin and history of Margherita Pizza

It is believed that in June 1889, pizzaiolo (pizza maker) Raffaele Esposito, Chef of Brandi, invented a dish called "Margherita Pizza" in honor of the Empress of Italy, Margherita of Savoy and the unity of Italy, as its toppings consist of tomato (red), mozzarella (white) and basil (green), representing the three bands of colors on the Italian flag.

The above legend about the Margherita pizza is considered pseudo-historical, i.e. unfounded, because a pizza made with similar toppings was present in Naples between 1796 and 1810, only that at the time, it probably wasn't called "Margherita". In 1830, in his book Napoli, contorni e dintorni, written by Riccio, the pizza was described as a pizza with tomatoes, mozzarella, and basil.

In 1849, Emanuele Rocco documented different pizzas such as basil, tomato and thin slices of mozzarella, along with basil leaves, thinly sliced mozzarella, arranged in a flower shape placed on top of the sauce. tomato: this may be the actual origin of the name Margherita (meaning chrysanthemum).

Esposito named the dish after Queen Margherita and then everyone called this cake with that name. However, there are still some opinions that the word "margherita" when translated into Italian means "daisy".

Some argue that the cake got its name due to the arrangement of mozzarella cheese and basil leaves shaped like chrysanthemums on the cake.

4. Versions of Margherita Pizza

Although originating in Italy, Margherita Pizza has become popular around the world thanks to its delicious taste, easy to eat and not too high price. Due to the characteristics of regional differences, Margherita Pizza when imported into different countries will be slightly modified to make the taste more suitable to the taste of the people there.

Margherita Pizza with the traditional taste of beautiful Italy requires a lot of strict requirements, a very strict way of making dough and choosing ingredients. Previously, Napoli-style dough took 2-4 days to ferment slowly for many small air bubbles instead of large air pockets like regular pizza dough. The cake must be baked in a dome oven with a high temperature that causes the edges to swell and almost burn wood. However, it will be time consuming and difficult to serve a large number of customers. That's why Texgrill has improved according to its own recipe to ensure time but still sell delicious and keep the traditional flavor.
